List of Common Substitutions

1 tsp baking powder = 1/4 tsp. baking soda + 1/2 tsp.cream tartar

1 c. brown sugar = 1 c. white sugar + 2 tbsp. molasses

1 c. cake flour= 3/4 c. + 2 tbsp. flour plus 2 tbsp.cornstarch

1 oz. unsweetened chocolate = 3 tbsp. cocoa powder + 1 tbsp.shortening

1 c. honey = 3/4 c. sugar + 1/4 c. liquid

1c.corn syrup=3/4 c. sugar + 1/4 c. liquid

1 c. cream = 1/3 c. butter + 3/4 c. milk (use in cooking only)

1 c. whole milk = 1/2 c. evaporated + 1/2 c. water

1 c. whole milk= 1/3 cup non-fat dry milk + 1 c. water.=2 1/2 teaspoons butter or margarine

1 c. buttermilk = 2 tbsp. vinegar or lemon juice plus enough milk to equal 1 cup

1 oz. semi-sweet chocolate = 1 oz. unsweetened chocolate plus

4 tsp. sugar 1 tbsp. cornstarch = 2 tbsp. flour

1 c. melted lard or shortening = 1 c. oil

1 tsp. baking soda + 2 tbsp. milk = 1 egg
