Candied Yams
this recipe is the one I have used and the one my mother used while I was growing up. Actually until now there
really has not been an actual recipes, but this is my favorite way to do yams, so I thought I would share it with you.
1 can yams OR 2-3 fresh yams
1 pound Brown Sugar
1/2 cup butter
mini Marshmallows (optional)
if yams are fresh, precook in steamer, boiling water, or microwave, till a fork inserted goes in with a little effort.
Do not over cook, as you will be cooking them again.
In skillet, melt butter, and add brown sugar stir till the sugar is all dissolved. (NOTE if this seems a bit thick
or not quite enough, go ahead and add a bit more butter.)The mixture, should be thin enough to "baste" the


yams with. Add the yams and cook till the sugar mixture begins to carmelize, and the edges of the yams start
to turn dark with the carmelized sugar.Approximately 30-45 minutes. put in serving bowl, and sprinkle a few
mini marshmallows on top. (Note, this mixture will be extremely hot, so allow it to stand for 15 minutes before
adding marshmallows and serving.)
